I am always on the lookout for a new yummy recipe that can incorporate vegetables. I grew up a very picky child, and I was never very interested in eating fruits and veggies (which is frustrating as an adult trying to eat well). That's what drew my attention to this recipe for Clean Eating Cauliflower Alfredo Sauce!
The texture of vegetables is something that tends to bother me, but when they are prepared a certain way I can't say no. Cauliflower and I do not like each other in the raw form, but after cooking and blending, this recipe turned out so well! It is cheesy and creamy, and you almost forget that you're getting a great serving of veggies in. I threw some chicken into this for a complete meal, and it would also be great with some spinach added in!
Clean Eating Cauliflower Alfredo Sauce
Ingredients
1 large Head of cauliflower (about 6 cups florets)
1 large Sweet onion, chopped (about 1 1/2 cups chopped)
2 tbs Garlic, minced (or 1 tsp garlic powder)
1/2 cup Unsweetened almond milk (or low fat milk of choice)
1/2 cup Plain low fat Greek yogurt (or lactose/dairy free yogurt)
1/2 cup Parmesan cheese, grated
1 tsp Onion powder 1 tsp Salt (or to taste)
1/2 tsp Pepper (or to taste)
Directions
Step 1: Cook the Cauliflower
Wash the head of cauliflower. Remove the leaves and base stem. Cut the rest of the cauliflower into florets. Place the cauliflower florets in either a medium pot, and add just enough water to the pot to cover the cauliflower florets. Cover pot and cook over medium low heat on your stove top for about 8-10 minutes, or until tender. Carefully drain the cauliflower and water into a colander, or scoop cauliflower out with a slotted spoon.
Step 2: Make the Sauce
While cauliflower is cooking, spray a large skillet with cooking spray and saute the onions and garlic over medium heat until tender and lightly golden brown. Place steamed cauliflower, and sautéed onions and garlic in a blender or food processor along with the rest of the ingredients for the sauce. Blend until the sauce is completely smooth. Enjoy over noodles of choice!
